1. Salted Caramel Irish Coffee
Stir together 1/2 cup sugar, 2 Tbsp corn syrup, and 2 Tbsp water in a medium saucepan. Turn the heat on medium and cook, stirring, until the mixture starts to bubble. Stop stirring and let boil until deep amber, 10 to 15 minutes. (Watch constantly; it can burn quickly.) Immediately remove from heat and stir in 1 cup hot heavy cream. (Caramel will bubble up.)
