Sweet Potato, Zucchini and Onion Frittata – Printable Recipe

Sweet Potato Frittata

This Sweet Potato, Zucchini and Onion Frittata looks so delicious!

 

Ingredient:

– 2 TBSP. coconut oil (or extra virgin olive oil)

– 1 thinly sliced sweet potato

– 2 thinly sliced zucchini

– 1/2 of a red bell pepper, diced

– 1 cup sliced mushrooms (optional)

– 1 onion, diced

– 4 whole eggs

– 6 egg whites

– 1.5 tsp. italian seasoning (or your own mix of basil, parsley, thyme, etc.

– salt & pepper

– 1/4 cup of whatever shredded cheese you wanna throw on top!

 

Directions:

1) Heat your oil over medium heat. Add the slices of sweet potato and diced onion and cook for about 12 minutes (or until soft), stirring so everything cooks evenly. You want the potatoes to get pretty soft, so you may have to turn the heat down to do this without getting them too “burnt”.

2) Add the zucchini and bell pepper (this is when I threw the mushrooms in, too!) and cook about 5 minutes, or until everything is tender.

3) While the veggies are sauteing, whisk the eggs and egg whites together in a bowl. Season with salt and pepper, and add the italian seasoning. Add the egg mixture to the veggies.

4) Turn the heat to low, and cook until the eggs are set (this took about 12 minutes for mine, but it may vary depending on what kind of pan you are using. Just cook it until the eggs look decently “done!”)

5) Throw your cheese on top. Put the frittata in the oven under a pre-heated broiler (I cooked mine at 475 for about 8 minutes.). Add some pretty green stuff (parsley!) on top, slice, and ENJOY!
