Baked Pasta Pockets
Ingredients
  • 2 packages of refrigerated pie crusts
  • olive oil spray for lining cookie sheets
  • 1/4 cup vegetable oil for saute the onions
  • 1/2 box store-bought cheese ravioli cooked according to package directions and diced into small cubes
  • 1 cup chicken breast cooked and diced into small cubes, you buy store bought chicken or use leftover chicken
  • 1/2 onion thinly diced
  • 1/4 cup grated Parmesan cheese
  • 1 small potato cooked and diced into small small cubes
  • 1 egg yolk beaten for brushing top of crust
Instructions
  1. Unwrap the pie crusts and using a cookie cutter or bottom of a cup, cut out 4" circles.
  2. Re-roll the excess pie crusts and cut some more.
  3. Put the circles on a plate and put them back in the fridge while you prepare the filling.
Make the filling:
  1. In a small pot with water, cook your potato until just barely tender. You don't want them to fall apart while mixing them later. Drain them and set aside.
  2. Cook ravioli according to package directions, remove from pot, drain and dice into small cubes.
  3. In a large skillet, saute the onion in vegetable oil, until the onions start to sweat.
  4. Add in the cooked chicken, drained potatoes and Parmesan cheese and mix well until all is combined. Stir in the cooked and diced ravioli.
  5. Take off the heat and preheat your oven to 450 degrees F.
  6. Lightly spray 2 cookie sheets with cooking oil..
  7. Take your circles out of the fridge and start assembling your pockets.
  8. Add about 2 Tablespoon filling to center of each crust.
  9. Seal the pockets, starting on one end, pinch and 'tuck', pinch and 'tuck', repeat until you get to the other end and reshape if needed.
  10. Place them on the greased cookie sheet and take your beaten egg yolk and a pastry brush and brush the tops of the pockets with the yolk.
  11. Bake for about 12-15 minutes or until they're golden brown.
  12. Let cool on the cookie sheet for 5 minutes then transfer them to a cooling rack.
