6 large Russet or red Potatoes
1/2 cup olive oil
salt and pepper to taste
1 cup cooked ham, diced
1/4 cup red onion
1/4 cup parsley
1 cup grated mozzarella cheese
Wash potatoes and cover tops with olive oil. Salt and pepper to taste.
Bake in 350 degree F. for 45 minutes.
Slightly cool potatoes and slice 1/4 off the top of the potatoes with a sharp knife.
With a spoon, scoop out center of each potato, scraping out as much as you can, leaving the skins intact. If you wish more topping on top, then leave more of the potatoes in the skins.
Place in large bowl and mash with the spoon.
Add the eggs, diced ham, onion and parsley to the mashed potatoes.
Mix well and pour into hollowed potatoes skins.
Place the filled potatoes in a large baking dish. Top with mozzarella cheese.
Place back into oven for 10 to 15 minutes more.
