Beets are low in calories, yet high in valuable vitamins and minerals. In fact, they contain a bit of almost all the vitamins and minerals that you need. Pineapples are tropical fruit that are rich in vitamins, enzymes and antioxidents. They may help boost the immune system, build strong bones and aid indigestion. Beet and Pineapple Smoothie



1/2 cup unsweetened almond milk 

1 small beet — peeled and diced (about 8 ounces)

1 and 1/4 cup frozen pineapple

1/4 cup plain Greek yogurt

Optional sweetener: 1-2 teaspoons honey


Place the almond milk, beet, pineapple, and Greek yogurt in a high speed blender.  Blend until smooth. Taste and if you desire a sweeter smoothie, add a little honey and blend again.

Enjoy immediately or refrigerate for up to 1 day.
