Beet and Pineapple Smoothie

Ingredients

1/2 cup unsweetened almond milk 

1 small beet — peeled and diced (about 8 ounces)

1 and 1/4 cup frozen pineapple

1/4 cup plain Greek yogurt

Optional sweetener: 1-2 teaspoons honey


Instructions

Place the almond milk, beet, pineapple, and Greek yogurt in a high speed blender.  Blend until smooth. Taste and if you desire a sweeter smoothie, add a little honey and blend again.

Enjoy immediately or refrigerate for up to 1 day.
