Berry Puffy Pancakes Printable Recipe

This easy twist on pancakes puffs up in the oven and then falls.

Berry Puffy Pancakes

Ingredients

Pancake:

2 Tablespoons Land O Lakes® Butter

1/2 cup all purpose flower

1/2 cup milk

2 Land O Lakes® All-Natural Eggs

Topping

1 1/2 Cup quartered strawberries

1/2 Cup fresh blueberries

Powered Sugar, if desired.

 


 
 
Directions:Heat oven to 425°F. Melt butter in 9-inch glass pie pan in oven. Brush melted butter over bottom of pan.

Meanwhile, combine flour, milk and eggs in medium bowl; beat with wire whisk until well mixed. Carefully pour batter into hot pie pan. Bake 14-17 minutes or until puffed and light golden brown.

Meanwhile, combine strawberries and blueberries in medium bowl. Spoon berry mixture over puffed pancake; sprinkle with powdered sugar, if desired. Serve immediately.

You can Substitute your favorite combination of berries to fill this puffy pancake.
