Blackberry Cream Cheese Cake. Easy recipe and perfect for a summer holiday treat. Using a box cake mix bottom then a blackberry cream cheese topping. If you like blueberries you will love this.
1 Box Yellow Cake Mix
16 ounces cream cheese
2 envelopes Dream Whip (1 box)
1 cup whole milk
1 teaspoon vanilla extract
2 cups powdered sugar
1 cup blackberries, mashed
1/4 cup sugar
2 to 3 Tablespoons water
Bake cake according to package directions, set aside to cool.
Using a mixer, beat the cream cheese well.
In a separate mixer bowl, whisk together the Dream Whip (save some of the dream whip for top of cake). with the milk and vanilla, according to package directions. Whisk it until it begins to form soft peaks, about 4 minutes.
Add the cream cheese and powdered sugar to the Dream Whip mixture, and whisk for 3 to 5 minutes, or until it’s smooth and creamy. Place in refrigerator for 15 minutes.
Crush your blackberries with a fork. Combine the blackberries, sugar and water in a small saucepan over medium heat until thick. Cook for 5 to 7 minutes, stirring occasionally. Break down the blackberries with the back of your spoon. Drain any excess juice.
Take the cream cheese mixture out of the refrigerator and stir in the blackberry mixture. Pour over baked cake, smooth out evenly and return to refrigerator.
When ready to serve add dollop of dream whip over cake and a blackberry on top. (optional)
