Cheesy Potato Broccoli Casserole. Recipe that is baked to perfection with cheese, potatoes, broccoli, bacon bits, mushroom and onions. This will be the best casserole you ever made.
Cheesy Potato Broccoli Casserole
- 6 russet potatoes sliced into 1/4 inch slices
- salt and pepper to taste
- 1 cup fresh or frozen broccoli
- 1/2 cup diced onions
- 1/2 cup sliced mushrooms
- 1 cup shredded Mozzarella or Cheddar cheese
- 8 slices bacon cooked and crumbled or bacon bits
- 2 cups milk
- 2 large eggs
- fresh or dried parsley or bay leaves to garnish (optional)
Preheat oven to 375 degrees. Butter a 9x13 -inch baking dish. Set aside.
Layer half of the potato slices in the dish, overlapping slightly. Season with salt and pepper. Sprinkle the cheese on top of the potatoes and add the crumbled bacon pieces, broccoli, mushrooms and onions. Add the other half of the potato slices on top of the cheese.
In a small bowl, mix together the milk and eggs. Pour the mixture over top of the potatoes and gently stir.
Sprinkle the parsley or bay leaves on top (optional).
Cover with foil and bake for 1 hour or until the casserole is lightly browned.
Allow the dish to rest for 15-20 minutes before serving.
