- 2 large potatoes boiled and diced
- 1/4 cup butter
- 2 green onions chopped
- 1/4 cup flour
- 3 cups chicken broth
- 3 cups milk
- 3/4 pound cheddar cheese shredded
Boil potatoes in water for about 15 minutes. Until just barley tender. Dice cooled potatoes and set aside.
In a large saucepan over medium-high heat, melt butter. Add green chopped onions and cook until tender, about 5 minutes. Stir in flour and cook until flour has blended with the onions.
Add chicken broth and cook, stirring constantly, until mixture is slightly thickened. Add milk and heat just to boiling, stirring constantly.
In covered blender at medium speed, blend about 1/4 of soup mixture at a time until smooth. Return to saucepan and, over medium heat, heat just to boiling. Remove from heat.
With wire whisk, stir in cheese until melted.
Stir in the cooked potatoes and warm for 1 minute longer.
Serve with your favorite crackers, optional.
