Christmas Cinnamon Rock Candy. Homemade recipe for a dessert that is perfect for the Holiday’s. Makes a great gift for friends.
Christmas Cinnamon Rock Candy
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- dash of salt
- 1 tsp cinnamon oil
- 3-4 drops red food coloring
- powdered sugar
Bring sugar, corn syrup and a dash of salt to a boil and let boil until it reads 300 F. degrees on a thermometer or reaches hard-crack stage.
Besides using a candy thermometer, this stage can also be determined by dropping a spoonful of hot syrup into a bowl of very cold water. Then remove the candy from the water and attempt to bend. If the hard-crack stage has been reached, the syrup will form brittle threads in the water and will crack if you try to mold it.
Remove from heat and stir in food coloring and cinnamon oil.
Immediately pour onto a parchment lined pie pan or 8X8 in. pan covered with powdered sugar-thick. Once it cools completely and is hard, gently tap on the candy to crack it.
Store in an airtight container.
