3 cups all-purpose flour
4 teaspoons FRESH baking powder
2 eggs, room temperature
1 cup sugar
1 cup buttermilk
1/2 cup vegetable oil
3 medium size ripe bananas, mashed
1 teaspoon vanilla
1 cup walnuts, chopped
Preheat oven to 400 degrees F. Spray muffin tins or place jumbo liners into the muffin tins.
In a large bowl mix together flour and baking powder. Set aside.
In a medium bowl mix together eggs, sugar, buttermilk, oil, bananas, and vanilla. Fold wet ingredients into dry ingredients. Mix until just combined. Stir in walnuts. Careful not to over mix.
Scoop batter into prepared tins making sure to fill to the top. I used an ice cream scoop.
Bake at 400 degrees F for 30 to 35 minutes, or until a toothpick inserted into center comes out clean.
