Easy Honey Roasted Pumpkin Seeds

Easy Honey Roasted Pumpkin Seeds
  • 1/4 cup Honey
  • 3 cups fresh pumpkin seeds cleaned
  • 2 Tablespoons cinnamon
  • Kosher salt for sprinkling
  1. Preheat oven to 300 F.
  2. Separate the pumpkin seeds from the flesh.
  3. Rinse seeds and put them on a paper towel and blot dry.
  4. Let them air dry overnight or for a few hours.
  5. In a large mixing bowl, mix honey and cinnamon until well-combined.
  6. Add the pumpkin seeds to the mixing bowl and mix well until all of the seeds are thoroughly coated.
  7. Spread out seeds on parchment paper or non stick foil to a baking sheet.
  8. Bake for 20-30 minutes or until slightly crunchy.
  9. Remove seeds from oven and lightly sprinkle with kosher salt to taste; stir and let cool on the pan.
  10. Store in an airtight container for up to a week.
