Easy Taco Bell Copycat Breakfast Crunch
- 1 egg mixed with 3 teaspoons milk
- Salt and pepper to taste
- 1 teaspoon butter
- 3 pieces fried bacon crumbled
- 1 slice frozen hash brown patties
- 1 12 inch flour tortilla warmed
Fry bacon until crisp. Drain on paper towel and set aside.
To warm hash brown: Pour a little oil onto a frying pan. Transfer your hash browns onto the pan. Don't use low heat. After about 3 minutes, turn them once and keep frying until a golden brown. Leave in pan to keep warm.
To fix tortilla: Over medium-high heat, in a small sauce pan, place tortilla in small amount of oil, brown on both sides. Remove from pan and set aside.
After tortilla is warmed, use same pan to scramble eggs.
To Scramble eggs: Beat egg, milk, salt and pepper in medium bowl until blended.
Heat 1 teaspoon butter in a nonstick skillet over medium heat until hot. Pour in egg mixture and the crumbled fried bacon. As eggs begin to set, Gently pull the eggs across the pan with a spatula, forming large soft curds. Continue cooking – pulling, lifting and folding eggs – until thickened and no visible liquid egg remains.
Put together: Lay tortilla flat. Place hash brown on top, then the scrambled egg. Fold the tortilla over the hash brown and scramble egg.
Makes 1 Breakfast Crunch. Double recipe to make 2.
