Beef Stew In Your Crock Pot
- 2 tablespoons olive oil
- 2 pounds stew meat cut into 1-inch cubes
- Salt and ground black pepper to taste
- 1 pound potatoes diced
- 2 carrots diced, (I like to pre boil my carrots first, so they don't taste so strong in the stew)
- 1 onion diced
- 2 cloves garlic minced
- 3 cups beef broth
- 2 tablespoons tomato paste
- 1 can green beans
- 1 can whole Kernel corn
- 1 can Lima beans
Heat olive oil in a large skillet over medium heat.
Season beef with salt and pepper, to taste. Add beef to the skillet and cook until evenly browned, about 2-3 minutes.
Pre boil carrots, if desired, for 2 minutes .
Place beef, and remaining ingredients into your crock pot. Stir until well mixed.
Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.
