Healthy One Pot Meal. Recipe for a quick and easy meal that is low fat and low carb. Steamed in minutes to perfection.
- 1/4 cup vegetable oil
- 1/2 cup shredded carrots
- 1/2 cup canned corn
- 1/2 cup shredded red onion
- 1/2 cup shredded cooked chicken
- 1/2 cup shredded broccoli
- 1/2 cup cleaned sliced mushrooms
- 1/4 cup sliced almonds
- 2 slices fresh lime
- 1 hard boiled egg sliced in half
Hard boil egg and set aside.
Slice lime and set aside.
Prepare rest of vegetable, almonds and chicken in separate bowls.
In a large sauce pan heat oil and add bowls of vegetables, shredded chicken, almonds and corn into separate corners.
Turn heat on very low, cover and steam for 15 minutes or until vegetables are soft.
Uncover and place boiled egg and lime on top.
Steam for another 5 minutes.
Best part is that you can substitute any vegetables that you enjoy.
