Leftover Turkey With Homemade Noodles Soup
- **Make Homemade Noodles first
- 2 tablespoons vegetable oil
- 1 onion finely chopped
- 1 carrot peeled and chopped
- 1/2 stalk celery thinly chopped
- 8 cups chicken broth
- 3 cups leftover Turkey chopped
- Salt and black pepper to taste
- 1 egg beaten
- 1/2 teaspoon salt
- 2 Tablespoons milk
- 1 cup all-purpose flour
In a large pot, heat oil over medium-high heat until shimmering. Add onion, carrots, and celery and cook until softened, about 5 minutes.
Stir in broth and turkey. Bring to simmer and cook until vegetables are tender, about 15 minutes.
Drop in Homemade Noodles and cook about 10 minutes longer. Remove from heat, season to taste with salt and pepper.
Combine egg, salt, milk. Add flour. Separate into two balls.
Roll out dough, and let stand for 20 minutes.
Cut into strips and spread to dry, dusting with a little flour. Let dry for approximately 2 hours.
To make the soup even easier you can substitute the homemade noodle for 8 ounces egg noodles.
