Mexican Style Chilaquiles

Mexican Style Chilaquiles. Easy recipe that has chili sauce and tortillas mixed into one delicious plate. Topped with cheese. Serve with a salad for a delicious meal.

Mexican Style Chilaquiles
  • 1 dozen corn tortillas preferably stale, or left out overnight to dry out.
  • Corn oil
  • Salt to taste
  • 1 1/2 to 2 cups red chili sauce or salsa
  • Parmesan or Cotija cheese for topping
  • Cilantro chopped red onion for garnish, optional
  1. Fry the tortillas: In a large sauteed pan, coat pan generously with corn oil, (1/8 inch), heat on medium high to high. When the oil is hot, add the tortillas and fry until golden brown. Remove tortillas to a paper towel lined plate to soak up excess oil. Sprinkle a little salt on the tortillas.
  2. Heat the salsa or red chili sauce: Add 2 Tbsp oil to pan, bring to high heat again. Add the salsa or red chili sauce and let cook for several minutes.

  3. Add the fried tortillas to the sauce. Gently turn over the pieces of tortilla until they are all well coated with the sauce. Let cook for a few minutes more.

  4. Remove from heat and top with cheese, cilantro and red onion.
  5. Serve warm.
