Muffin Pan Chocolate Chip Pumpkin Cookies
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter softened
  • 1 cup pure pumpkin
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  1. Spray muffin pans with non-stick baking spray or use cupcake liners. Set aside.

  2. Combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
  3. Beat sugar and butter with mixer on medium high speed, then blend in pumpkin, egg, and vanilla until well mixed.
  4. Gradually mix in flour and dry ingredients and chocolate chips. Refrigerate dough for 3-4 hours.
  5. Preheat oven to 375 degrees.
  6. Scoop dough into one inch balls. Place in prepared muffin trays and bake for 11-13 minutes.
