Samoa Cupcakes
Ingredients
  • 1 1/3 cups all-purpose flour
  • 2 1/2 Tbsp cornstarch
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup unsalted butter
  • 3 Tbsp vegetable oil
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1/4 cup buttermilk
  • CARAMEL SAUCE
  • 3/4 cup granulated sugar
  • 3 Tbsp water
  • 3 Tbsp salted butter
  • 1/4 cup + 2 Tbsp heavy cream poured into the same cup so it can be added all at once
  • CARAMEL BUTTERCREAM FROSTING
  • 1/2 cup butter I used 1/4 cup unsalted 1/4 cup salted, at room temperature
  • 1/4 cup + 2 Tbsp caramel sauce
  • 2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • TOPPING
  • 1 cup chocolate chips I used 1/2 cup semi-sweet and 1/2 cup milk chocolate
  • 1/4 cup heavy cream
  • 1 cup toasted coconut cooled and slightly crushed into smaller pieces
