Strawberry Delight Recipe

Strawberry Delight Recipe. Yummy dessert with a crunchy crust, homemade whipped cream center and topped with fresh strawberries.


Strawberry Delight Recipe
  • 1 and 1/2 cups sifted all purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 4 to 5 Tablespoons cold water
Whipped Cream Center:
  • 4 ounces cream cheese softened
  • cup powdered sugar
  • 1 and ½ teaspoon vanilla
  • 1 cup heavy whipping cream
Strawberry topping:
  • 1 pint fresh strawberries
  • 1/3 cup white sugar
  • 1 teaspoon vanilla
  1. Sift together flour and salt. Cut in shortening with pastry blender or blending fork until pieces are the size of small peas.
  2. To make pastry extra tender and flaky, divide shortening in half. Cut in first half until mixture looks like corn meal. Then cut in remaining half until looks like small peas.
  3. Sprinkle 1 Tablespoon of the water over part of the flour mixture. Gently toss with a fork; push to one side of bowl.
  4. Sprinkle next Tablespoon water over dry part; mix lightly; push to moistened part at side. Repeat until all is moistened. Gather up with fingers; form into ball.
  5. On a lightly floured surface; flatten ball sightly and roll 1/8 inch thick. If edges split, pinch together. Always roll dough from center to edge. Using light strokes.
  6. To transfer pastry, roll it over rolling pin; unroll pastry over pie plate, fitting loosely onto bottom and sides into 8 inch square pan.

  7. Prick bottom and sides well with a fork. Bake in very hot oven (450 degrees F.) 10 to 12 minutes. Set aside to cool.
Whipped Cream:
  1. In a large mixing bowl, beat the softened cream cheese, powdered sugar and vanilla until light and creamy. Remove cream cheese mixture from mixing bowl and set aside.
  2. Add 1 cup heavy whipping cream to mixing bowl and whip until soft peaks form.
  3. Add cream cheese mixture to heavy cream and beat just until stiff peaks form.
  4. Keep refrigerated until ready to use.
  5. Spread over cooled crust.
  1. Wash strawberries and remove stems; cut large berries in half, smaller strawberries can be left whole.

  2. Combine strawberries, sugar, and vanilla in a saucepan.
  3. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form.
  4. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup.
  5. Cook until sauce thickens, about 15 minutes.
  6. Cool and spread on top of the crust and whipped cream.
