Summertime Spinach Salad. Healthy Recipe for a delicious multi ingredient salad. Party perfect.

Summertime Spinach Salad
- 2 cups spinach leaves
- 1 cup fresh strawberries sliced and divided
- 1/2 cup cucumbers sliced
- 1/2 cup cherry tomatoes sliced
- 1/4 cup cashews
- 1/2 cup sour cream
- 1/4 cup shredded cheddar cheese
For Strawberry Sauce:
- 1/2 cup strawberries
- 1/3 cup sugar
- 1/3 cup water
- 1/2 Tablespoon lemon juice
- 1 Tablespoon corn starch mixed in 3 Tablespoon water
Make Strawberry Sauce:
Combine fresh diced strawberries, sugar, water, and lemon juice in a saucepan on medium-high heat and bring to a boil.
Once the mixture begins to boil, lower the heat and allow the strawberries to cook and soften, breaking up the strawberries and stirring occasionally with a wooden spoon for about 8-10 minutes.
Remove sauce from heat and press through a fine mesh strainer into a separate bowl, discard the seeds and solid pieces. Pour liquid back into saucepan and return to stove.
Add 1 tablespoon of cornstarch to 3 Tbsp of water and whisk until combined and cornstarch is dissolved. Add to sauce and cook on medium-high heat, constantly whisking until glaze thickens, about 1 minute.
Set aside to cool.
Put it together:
Place spinach on bottom of bowl or plate.
In a separate bowl combine strawberries. cucumbers, tomatoes and cashews. Mix together.
Place on top of spinach.
Place the sour cream and cheddar cheese on top.
Drizzle with strawberry sauce.
