The Best Pork Dish.Recipe for roasted pork loin then topped with bacon, green onions, parsley and cheese. Serve over mashed potatoes or rice for a yummy main dish.
The Best Pork Dish
- 1 pound boneless pork loin roast
- 1 1/2 cloves garlic minced
- salt and pepper to taste
- 1/8 cup olive oil
- 1/4 cup white wine
- 1/2 pound bacon cooked and crumbled
- 2 chopped green onions
- 1 cup cheddar cheese diced
- 1/4 cup parsley
Preheat oven to 350 degrees F.
Crush garlic. Add salt and pepper. Pierce meat with a sharp knife in several places and press the garlic into the openings. Rub the meat with olive oil and wine.
Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. Remove roast to a platter. Cool sightly and cut into strips.
Fry bacon in a pan until very crispy. Crumple into pieces.
In a baking dish add pork, bacon, green onions, parsley and diced cheese.
Return to oven for about 5 minutes or until cheese SLIGHTLY melts.
Serve over mashed potatoes or rice.
