The Best Rice Pudding.
This homemade recipe would make a perfect gift. Just put it into small mason jars and seal.

4 cups whole milk
2/3 cup rice
1 cup coconut milk
1/3 cup sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon orange zest
1/8 teaspoon salt
1 tablespoon butter
Garnish: chopped roasted salted pistachios and orange zest
In a large saucepan, bring milk, rice, coconut milk, sugar, cardamom, orange zest, and salt to a boil over medium-high heat, stirring frequently (see notes). Reduce heat; simmer over medium-low heat, stirring occasionally, until rice is tender and mixture is thick and creamy, approximately 50 minutes. Stir in butter.
Divide pudding among four small serving dishes.
Garnish with pistachios and orange zest, if desired.
Serve warm or seal in small mason jars.
While rice mixture is coming to a boil, keep an eye on it because it can boil over very quickly.
Yields 4 servings.
