The Perfect Carrot Cake. If you like coconut you will love this recipe. Dessert made with carrots, walnuts, pineapples and coconut with a delicious cream cheese icing.

Ingredients
Cake:
  • 2 cups flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 1/2 cup oil
  • 4 eggs beaten
  • 1 cup shredded coconut
  • 2 cups sugar
  • 1 tsp baking powder
  • 3 teaspoons cinnamon
  • 1/2 cup walnutsĀ 
  • 2 cups grated carrots
  • 1 can crushed pineapple drained
Icing:
  • 1 pack of cream cheese softened
  • 1/4 cups butter soft
  • 2 cups icing sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup shredded coconut
Instructions
Cake:
  1. Mix together sugar, oil and eggs. Add dry ingredients and mix well. Add carrots, pineapple, and coconut, and walnuts. Stir until combined. Pour into lightly greased 9x13 inch pan. . Bake at 350 for 40-45 min or till done.
Icing:
  1. Mix together and beat with beaters until light and fluffy. Spread on well cooled carrot cake
