Vanilla Custard Cookie Cups

Ingredients

Custard:

3 cups milk

1 teaspoon vanilla extract

Separate ingredients :

1 cup milk

4 egg yolks

3/4 cup sugar

1/2 cup corn starch

Cookie Cups:

1 cup butter

1 1/2 cup sugar

1/2 Tablespoon baking soda

2 eggs

2 1/4 cups flour


Instructions

Custard:

Put 3 cups of milk to a large pan on the stove. Bring to a boil. Add vanilla extract. Set aside.

In a separate bowl put in 1 cup milk, sugar. Mix in egg yolks until blended. Add in corn starch and mix. Pour in boiled milk mixture and mix.
Return mixture to heated stove (on low). Cook and whisk until thick. Pour into large bowl, cover and put in your refrigerator.

Cookie Cups:

Place butter, sugar, baking soda and eggs in large bowl and mix. Add in flour and mix until well blended.

Spoon into cupcake pan and bake at 350 degrees F. for 10 to 12 minute.

While still slightly warm place a round small jar (like your vanilla extract jar) in the center of the cupcakes. pressing lightly to make a hole in the center of the cupcakes.

Cool cupcakes and place custard mixture into the center.

Add fruit of your choice to the top and sprinkle with powdered sugar.

Refrigerate until ready to serve.
