Walnut Christmas Cake

Walnut Christmas Cake. Dessert recipe with a walnut, honey cake and layered with a cream cheese, whipping cream filling. A festive holiday recipe.


Walnut Christmas Cake



For the cake:

1/2 cup butter, softened

2/3 cup sugar

3 eggs, separated

1 and 1/3 cups self-rising flour

1 and 1/3 cups ground walnuts

2/3 cup milk


1/4 cup honey, slightly warmed

1/2 cup walnut halves, roasted

For the center and topping:

8 oz. cream cheese

1/4 cup whipping cream

1 Tablespoon confectioners’ sugar

1 Tablespoon instant coffee granules

1 tablespoon hot water


For the cake:

Preheat oven to 325″F. Grease deep 8-inch round cake pan; line base and side with parchment paper.

Beat butter and sugar in a small bowl with an electric mixer until light and fluffy. Beat in egg yolks, one at a time, until combined. Transfer mixture to a large bowl; stir in sifted flour, ground walnuts and milk, in two batches.

Beat egg whites in a small bowl with an electric mixer until soft peaks form. Fold egg white into cake mixture.

Spread mixture into pan. Bake about 50 minutes. Stand cake in pan 5 minutes before turning, top-side up, onto a wire rack to cool.

For the center and topping:

Mix the cream cheese and whipping cream until well mixed. Add the confectioners sugar. Mix.

Dissolve the coffee in the hot water in a small cup.

Fold into mixture. Cover and store in refrigerator until ready to use.

Put it together:

Using a serrated knife, split cake into two layers. Place bottom layer on a serving plate, spread with half the cream mix; top with remaining layer.

Warm the honey slightly. Spread top of cake with remaining topping, sprinkle with walnut halves and drizzle with honey.


To make ground walnuts, process roasted walnuts until very fine.
