Easy Vanilla Wafer Banana Pudding

  • 3/4  cup  sugar
  • 1/4  cup  all-purpose flour
  • 1/4  teaspoon  salt
  • cups  milk
  • large eggs
  • and 1/2 teaspoons vanilla extract
  • ounces  vanilla wafers about 60 cookies divided
  • large ripe bananas cut into 1/4-inch slices
  • Whipped cream for topping
  • Cherries for top if desired.
  1. In a large saucepan, mix sugar, flour and salt. Whisk in milk. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir about 2 minutes . Remove from heat.
  2. In a small bowl, whisk eggs. Add the whisked eggs into the warm mixture, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat. Stir in vanilla. Cool 15 minutes, stirring occasionally.
  3. After cooled gently stir in the banana slices and 1/2 of the vanilla wafers.
  4. Pour into 4 individual bowls, top with whipped cream, then CRUMBLE up the other half of the vanilla wafers and spread on top.
  5. Add cherries on top if desired.
  6. Refrigerate until ready to serve.
