Summertime Spinach Salad
  • 2 cups spinach leaves
  • 1 cup fresh strawberries sliced and divided
  • 1/2 cup cucumbers sliced
  • 1/2 cup cherry tomatoes sliced
  • 1/4 cup cashews
  • 1/2 cup sour cream
  • 1/4 cup shredded cheddar cheese
For Strawberry Sauce:
  • 1/2 cup strawberries
  • 1/3 cup sugar
  • 1/3 cup water
  • 1/2 Tablespoon lemon juice
  • 1 Tablespoon corn starch mixed in 3 Tablespoon water
Make Strawberry Sauce:
  1. Combine fresh diced strawberries, sugar, water, and lemon juice in a saucepan on medium-high heat and bring to a boil.
  2. Once the mixture begins to boil, lower the heat and allow the strawberries to cook and soften, breaking up the strawberries and stirring occasionally with a wooden spoon for about 8-10 minutes.
  3. Remove sauce from heat and press through a fine mesh strainer into a separate bowl, discard the seeds and solid pieces. Pour liquid back into saucepan and return to stove.
  4. Add 1 tablespoon of cornstarch to 3 Tbsp of water and whisk until combined and cornstarch is dissolved. Add to sauce and cook on medium-high heat, constantly whisking until glaze thickens, about 1 minute.
  5. Set aside to cool.
Put it together:
  1. Place spinach on bottom of bowl or plate.
  2. In a separate bowl combine strawberries. cucumbers, tomatoes and cashews. Mix together.
  3. Place on top of spinach.
  4. Place the sour cream and cheddar cheese on top.
  5. Drizzle with strawberry sauce.
